    Yorkshire’s Finest Traditional Old English Sausages (500g Pack)

    Yorkshire’s Finest Traditional Old English Sausages are handmade, containing nothing other than 96% of beautifully selected cuts of pork shoulder.

    Our pork shoulder is combined with a careful blend of seasoning and herbs with just a splash of water to create this delicious sausage.

    Our Sausages are made from our woodland pork. The pigs are native breeds including Large Yorkshire Whites, Saddlebacks and Gloucester Old Spot, that spend their free-range lives foraging in Yorkshire Woodlands. We select the very best gilts and most importantly when the gilts are ready we dry age our pork for around 7 days, in the same vein as our Beef and Lamb. In conclusion, this process helps intensify the flavour and texture.

    There are many ways to cook a fine sausage. For example, we enjoy cooking our sausages slowly, consequently developing all the delicious flavours and textures.

    • Bring Old English Sausages to room temperature
    • Use a heavy-based frying pan and gently fry your Sausages in a little oil for 30-40 minutes turning regularly.

  • Middle Bacon

    Waterford Middle Bacon (500g Pack)

    Made using only the finest, locally sourced Yorkshire pork. Yorkshire pigs such as the large white and middle white have been bred specifically to produce back bacon. We traditionally butcher and then dry-cured the bacon loins in salt, then rinse, before being air-dried and then sliced by our Master Butchers. Once made into rashers we cure the bacon for a further 24 hours in our Himalayan salt chamber.

    Pack weight to range between 490-510g

    Our Recommended Cooking Instructions:

    • Heat your oven to 175c
    • Place your middle bacon on a nonstick roasting tray. We prefer to curl the bacon to create a circle. In doing so the streaky part sits on top of the lean loin. This results in the loin being basted and protected from drying out from the belly section.
    • Slowly roast in the oven for 10-12 minutes and then finish by turning up the heat to 200c for 5 minutes.

    Our pride is due to the fact that our sausages are all handmade using the finest of ingredients. The thick pork sausage contains 70% pork, combined with a rusk and herb mix. In short, they are perfect for any occasion be it a breakfast or a sunny barbecue.

    Yorkshire’s Finest Thick Cumberland Sausages are a classic sausage, perfect for any meal of the day.

    Waterford Dry Cured Back Bacon is delicious in house-cured bacon.

    Back Bacon is the most popular bacon in the UK. Pigs have been bred over centuries to develop great bacon loins that we can enjoy on our English Breakfasts. The back belly is a combination of pork belly and pork loin in one cut, similarly to our middle bacon but with less belly.

    • Have the oven on low so you can keep the cooked bacon warm until it’s all ready
    • Cook, the bacon without moving, until the fat begins to turn golden, then turn over.

  • Doreen’s Black Pudding

    Doreen’s Black Pudding (Pack of 3 slices)

    Doreen’s Black Pudding is a multi-award-winning Black Pudding handmade by the Haigh family here in Yorkshire.

    The recipe is a closely guarded secret and was devised by Doreen Haigh over 30 years ago.

    Blood or black puddings are often considered to be one of the oldest forms of sausage. Animals are generally bled at slaughter, and as blood rapidly spoils unless prepared in some way, making a pudding with it is one of the easiest ways of ensuring it does not go to waste. Dried Pigs blood is combined with a mixture of barley, spices and herbs, The black pudding is then baked, subsequently producing a much stronger flavour compared to when it is boiled. Moreover, this gives the puddings a drier, meatier texture and flavour. The triangular shape is consequently unique to Haighs.

    Black Pudding makes a wonderful component in a full English breakfast when combined with bacon and sausages. Likewise, It also makes a great starter when served with scallops or other seafood.
