Our Pork products are made using only the finest, locally sourced Yorkshire pork.  To conclude, our chicken is sourced from the very finest local poultry farms across Yorkshire. We only select high welfare farm assured, grade A chickens

  • Chicken Liver Pate

    Chicken Liver Pate (500g)

    A delicious Chicken Liver Pate that is great as a starter or to use in recipes.

    A classic for Christmas but suitable all year round. Try it with some homemade onion marmalade and serve on French bread with all the accompaniments.

    We select high welfare farm assured, grade A chicken livers for this recipe. Chicken liver is packed full of nutrients and is a great source of iron. They are known as a super food and this pate is a great way to enjoy them.

    Pâté from the French means a “paste” or coarse mixture. It originates from the northern and central European cuisines. In the Middle Ages, it was a staple of the European countryside, the “Campagne” where meat, game, and poultry were raised, slaughtered, and prepared for food on the homestead. The pâté evolved as an economical and flavorful way to use all of the animals much like a blood sausage or cured ham.

    Importantly, the process of making Pate makes sure no part of the animal is wasted. Subsequently, it produces a delicious product for you all to enjoy.

    The Chicken Liver Pate comes in a large 500g pack, not as pictured.

  • Ham Hock Terrine

    Ham Hock Terrine (500g)

    A delicious ham hock terrine with thyme.

    The Hock is a cut from the bottom half of the pork leg providing delicious tender pork.

    It is cooked very slowly in a stock that includes pig trotters. The trotters produce a wonderful gelatinous stock that is then used to set the terrine. The stock is flavoured with many herbs but has a distinct parsley flavouring. After 10 hours of cooking the hock produces tender meat that is perfect to turn into a terrine.

    Our Terrines are made from our woodland pork. The pigs are native breeds including Large Yorkshire Whites, Saddlebacks and Gloucester Old Spot, that spend their free-range lives foraging in Yorkshire Woodlands. We select the very best gilts and most importantly when the gilts are ready we dry age our pork for around 7 days, in the same vein as our Beef and Lamb. In conclusion, this process helps intensify the flavour and texture.

    The Ham Hock Terrine comes in a 500g pack ready to slice and serve.  We enjoy ours with some pickled onions, gherkins and some toasted bread.

    A delicious Venison & Port Pate, perfect for a Festive party.

    Pâté originates from the northern and central European cuisines. In the Middle Ages, Pate was a staple of the European countryside, the “Campagne” where meat, game, and poultry were raised, slaughtered, and prepared for food. Pâté evolved as an economical and flavorful way to use all of the animals, in the same vein as blood sausages or cured products.

    The pate is made here in the north of the UK. Similarly to the chicken pate, it is a wonderfully smooth and delicate pate.

    All of our venison is wild, predominantly sourced from the Western Isles of Scotland.

    We have plentiful supplies of Wild Venison here in the UK. With no natural predators, it is up to humans to keep the numbers in balance. Recently less Venison has been consumed and as a result, we are starting to see an impact on our woodlands. More Venison = less saplings = less trees. Without an increase in venison consumption, we risk reducing our native plants and trees and as such weakening our biodiversity.

    To sum up, eating more Venison will not only help our environment but subsequently provide you with a lean, iron-rich and delicious meal.
