We are delighted to introduce our new and delicious Salt Aged Beef Wellington made by acclaimed Chef, Lawrence Yates.
Made from specially reserved 50 day Salt Aged Chateaubriands are taken off grass fed cattle. Each Wellington is marinated in Garlic and Thyme for 24 hours before getting sealed on a barbecue to give its unique, smokey flavour. The beef is layered with freshly prepared Mushroom Duxelles and Parfait, before finally being wrapped in all-butter French Puff Pastry. Decorated with a pastry lattice and hand-picked Thyme.
We count Lawrence as one of our very close friends and have supplied him for over a decade at various Michelin starred restaurants including the 2* Midsummer House and The Box Tree Restaurant, Ilkley.
This impressive CV means a focus on quality and refined processes that many other ready to cook Beef Wellingtons lack.
Lawrence can also provide Wellingtons for larger parties, so if you would like to enjoy a larger cook at home Wellington please order through his website here.
