Beef Wellington by Lawrence Yates

We are delighted to introduce our new and delicious Salt Aged Beef Wellington made by acclaimed Chef, Lawrence Yates.

Made from specially reserved 50 day Salt Aged Chateaubriands are taken off grass fed cattle. Each Wellington is marinated in Garlic and Thyme for 24 hours before getting sealed on a barbecue to give its unique, smokey flavour. The beef is layered with freshly prepared Mushroom Duxelles and Parfait, before finally being wrapped in all-butter French Puff Pastry. Decorated with a pastry lattice and hand-picked Thyme.

Suggested cooking instructions:

Take the beef Wellington out of the fridge 1 hour before cooking
to reach room temperature.

Remove from packaging and place on a baking tray with the
greaseproof paper it is wrapped in.

Preheat the oven to your desired temperature (see below)
Rare: 200 degrees for 30 minutes and rest for 18 minutes
Medium rare: 190 degrees for 42 minutes and rest for 20 minutes
Medium: 180 degrees for 52 minutes and rest for 25 minutes

Once the Wellington is cooked remove from the oven and place on a rack to
rest.

To get the perfect slice:
Place your Wellington on a chopping board and
with one hand gently hold it to prevent movement, then carve down
the middle with a long sharp knife.

Cut off the excess pastry at either end.
For best results don’t apply too much pressure, just carve it slowly and let the knife do the work.
