Description
Mortadella Bologna originates from the city of Bologna in Italy. Once upon a time it was reserved for the noble and rich and during the Renaissance was worth over 3 times as much as prosciutto due to the value of the raw material as well as the specialist artisans for production. Following the introduction of meat processing plants becoming established during the 19th Century this allowed for a wider consumer market and for it to be exported internationally.
Mortadella Bologna is unique in the charcuterie category as it is cooked, not cured like many of the other traditional meats. The quality is determined by its’ light pink colour with white fat spots to create a delicate, delicious flavour.
Mortadella can be eaten on its own or as part of an antipasti board. Italians will frequently use Mortadella in their sandwiches or even on pizzas in Southern Italy.
It has become such a popular meat there is even Mortadella Day which falls on 24th October which is celebrated and recognised worldwide.
